You are limiting yourself to other cuisine possibilities, if you already have a menu in mind even before you choose a caterer. If you get an experienced caterer then they will know what foods work best at receptions.
There are many types of wedding venue. You can have a beach wedding, a resort wedding, a formal church wedding, and other types of wedding. The availability of some foods and the menus people might expect are affected by the seasons and location of the wedding.
